Crepes

Here is another recipe from my mom. I can't remember her making them, though I'm sure she did. But I decided to try them after I had gotten married and absolutely LOVED them! Now, the batter is super easy to make, but cooking them can take a little time. I always have two small pans going to help speed up the process. Be careful not to let one crepe burn while tending to the other if you use two pans, however. So make these on your next lazy Saturday morning when you have someone there with you to help keep little kids at bay for a little while.

Here's what you'll need:

2 1/2 C. flour
2 T. sugar
1/2 t. salt
4 eggs
3 1/3 C. milk
1 T. vanilla
Heat fry pan on medium to medium-high heat. Put all ingredients in a bowl and beat with a beater on low until combined. The batter is going to be really thin!
Melt 1/8 of a Tablespoon of butter in heated skillet.
Pour in 1/3 cup of batter and spread. Here is a little video of how I melt the butter and spread the batter...

Cook until batter is set except for the center; flip and cook until golden.
Remove to a place and keep warm until serving. You can serve these puppies with cinnamon and powdered sugar, or chopped fresh peaches and whipped cream, or chopped fresh strawberries and whipped cream (or both or all three!). The possibilities are endless, really!
